What size of overall dough before cutting? For both pain au chocolat and the regular croissant?
Hi sizes is depend on how many kilo of your dough , i did not measure the final size before cutting.
hello, how much "% window pane" do you mix the dough with, I mean the dough pulls the film out there
Hi i did not go with the window pane just a 10-15 mins mixing time in slow mixer setting. Then rest overnight at 4c fridge.

Hello chef whats the best mixing time for bread on a bakery, im using 5 minute on slow and 8 on fast with 40g of salt per liter , letting it rest for 15 min then shaping the bread

There are organic food colors (made from fruit/vegetables) that could be a possibility, too. It looks like these are very similar to croissants, except croissants are made with butter and it appears that these are made with shortening. If you have a pasta machine (I do), I would use that rather than trying to roll the dough with a rolling pin.
